    Best damper recipes

    What is your favourite damper recipes?

    Generally I use Jack Absalom's Strzelecki Damper recipe:

    6 cups SR flour
    1 Tbs baking powder
    salt
    milk (warm)

    Here is mine
    2 cups of SR flour
    desert spoon of Italian herbs
    about a teaspoon of salt
    a table spoon or so of sunshine milk
    a big spoon of butter
    Tasty cheese diced to about 10mm sq

    mix it all together and break the butter up in your fingers so its even through the mix
    Add water gradually until you get a consistent firm dough
    Tip it out onto a floured board and knead it a few times
    Flatten it out to about an inch and put the tasty cheese in the middle, don’t put too much as it can make the damper greasy
    Fold the dough around and form a ball them seal it over at the top
    Put it in a pre heated camp oven and put some coals on the top and cook it for about half an hour or until it sounds hollow, or you can stab it with a knife and not get any dough out

    Easy..

    Just your normal damper recipe, roll dough out flat and place 2 large chopped mars bars over half, sprinkle marshmallows over it and fold in half, cook as per normal.
    Serve with ice cream and cream

    We make damper dough then mould a small amount around a stick about thickness of your thumb and cook over coals like marshmallow. When cooked you pull it off the stick and put a bit of butter and what ever else you like inside hollow. Eat and enjoy with favourite campfire beverage.
